Ned’s Bakes No.4: Dairy Free Chocolate Cupcakes



This week  Ned is bringing all you health conscious/ lactose free people a delightful dairy free Chocolate Cupcake recipe! Dairy and slightly guilt free, theses chocolate cupcakes have to be worth a go! We found this yummy recipe at so are celebrating their scrumptious recipe along with cupcake week!

You’ll Need:

Cupcake cases – approximately 14!
50g Cocoa Powder
120ml Boiling Water
200g Caster Sugar
3 Eggs
150ml Olive Oil (or Melted Coconut oil if you want to be healthier)
2 Tsp Vanilla Extract
150g Self Raising Flour
1 Tsp Baking Powder
For the frosting:

350g Icing Sugar
50g Cocoa Powder
150g Vitalite Spread (or any other Dairy Free Spread)
4-5 Tbsp Almond Milk
Sprinkles to decorate

To make:

1.Preheat your oven to approx 170 degrees and lay out your baking cups onto a baking or cupcake tray.

2.You need to make the chocolate paste first, so mix the boiling water and cocoa powder in a large bowl.

3.In a separate bowl, mix together the Caster Sugar, Eggs and Olive Oil (or Coconut Oil) until you have a thick yellow mixture that looks a bit like custard!

4.Mix your chocolate paste into the yellow mixture until it becomes a deep rich brown colour. Add the self raising flour and baking powder and mix together you will then have a slightly runny chocolate cake mixture.

5.Pour into your baking cups until they are about 2/3 full and bake in the centre of the oven for about 20 minutes. The cupcakes will be gorgeously moist and soft when you take them out of the oven.

6.Allow your little cupcakes to cool while you make the frosting!

7.To make the frosting, mix the Cocoa Powder, Icing Sugar, Dairy Free Spread and Almond Milk in a mixer until well combined and silky smooth. It is then very easy to spread over your cupcakes using a spoon, giving a lovely glazed frosting finish. Then Sprinkle to your hearts content!

Our lactose free Rhian is testing these out tonight so we shall report back with photos and a taste test tomorrow :) If you give them a go then post some photos too!!
